Update all sub-modules under springdoc-openapi-tests from 2.8.17-SNAPSHOT to 2.8.18-SNAPSHOT to match the root POM version bump. Fixes springdoc#3261

Fixes #3261
The
springdoc-openapi-testsmodule and all its sub-modules (11 total) werestill referencing
2.8.17-SNAPSHOTas their parent POM version after theroot was bumped to
2.8.18-SNAPSHOT. This caused the entire build to failimmediately for anyone cloning the repo fresh.

<version>tag inside<parent>block from2.8.17-SNAPSHOTto
2.8.18-SNAPSHOTin all affected modules underspringdoc-openapi-tests/.Testing
Verified full build passes after fix:
mvn clean install -DskipTests
