fix(ci): Replace deprecated GitHub Actions in release workflow

• Replace deprecated actions/create-release@v1 and actions/upload-release-asset@v1 with softprops/action-gh-release@v2
• Fixes set-output deprecation warnings in release workflow

• Replaced 16 steps (1 create-release + 15 upload-release-asset) with a single softprops/action-gh-release@v2 step
• All 15 release assets preserved (binaries, tarballs, checksums for all 5 platforms)
• draft: true behavior preserved
• Added fail_on_unmatched_files: true to catch missing assets early

GitHub deprecated the ::set-output workflow command. The archived actions/create-release@v1 and actions/upload-release-asset@v1 actions use this internally. softprops/action-gh-release@v2 uses the modern $GITHUB_OUTPUT environment file approach.
